Secrets of Perfect Pancakes

Posted by Sarah Caron on The Cook’s KitchenDo you struggle with making pancakes, finding some burnt beyond recognition while others challenge whether “lightly cooked” is truly edible?

Yea, that was me too until not too long ago. However, one day everything seemed to come together and I have been making delicious, delightful pancakes every since.

My secrets?

  • Preheat the pan, but make sure the temperature is set to just below medium - any higher and the pancakes will burn.
  • Use an ice cream scoop to portion the batter into the pan. Don’t overcrowd the pan.
  • Don’t just watch for bubbles on the top of the pancake, keep an eye on the sides, as the sides will solidify.
  • Flip fast with a thin metal spatula.
