Roasted Tomato Salsa

Garden Fresh

This salsa has been adapted from a tradional salsa with cut tomatoes to roasting them to bring out the flavor.  To roast the tomatoes, simply cut them in half and sprinkle each half with a pinch of salt and pepper and grill over medium heat until the skin is slightly charred.  Remove from the grill and place in a Ziploc bag and set aside for at least 5 minutes.  When cool, remove from the bag and peel away the outer skin and then follow the recipe listed below.

2 large tomatoes (roasted, peeled and chopped coarsely)
1 small onion (small dice)
1 green pepper (small dice)
2 cloves of chopped garlic
5 stems picked cilantro
3 Tbsp white vinegar
1 small can tomato sauce
Pinch of salt

Combine ingredients in order listed, stirring each together and finish by adding a pinch of salt if needed.  For another variation, you can also roast a ton the grill with the tomatoes for an added kick to the recipe.
