Picking Peppers - Does Color Matter?

yellow-pepper.jpgWhen shopping for bell peppers, you have a variety of colors to choose from … red, green, yellow, orange … does one color really make a difference over another?  In a word, yes. 

The red peppers have the most amount of antioxidants, with yellow and orange following closely behind, so say the research team at Louisiana State University.  If you’re looking for the biggest Vitamin C punch, yellows are your best bet, packing a mighty 340 milligrams of it, which is more than you’d get in three 8-ounce glasses of OJ.

Although green peppers will meet your 60 mg of Vitamin C quote a day, keep in mind that they haven’t reached full maturity in terms of nutrients.  Happy munching!
