A Taste of the Tropics

I spent a not-so-great year and a half living in North Central Florida. The weather, the relatively rural environment, and the politics just weren’t for us. However, there was one great plus to our time in Florida — we lived just a little over an hour away from Disney World, and we could go all the time. We scooped up annual passes and spent many great days soaking up the environment during off-peak times.

We’ve moved on now and rarely get back to Florida or Disney World, but every once in a while, we decide we need a little taste of the magic, so to speak. When that happens, we scour our cookbooks and the internet for some tasty Disney recipes. This week, it was no contest — my husband decided we needed to eat some Dole Whip.

Dole Whip is kind of like a creamy pineapple soft-serve ice cream. It’s served in Adventureland, and it immediately takes us to a breezy tropical place — perfect for a hot Sunday in May.

Apparently, the real Dole Whip is entirely non-dairy, but we balked at making something like ice cream with non-dairy creamer. We found several recipes online, and the first one we made was way too creamy and sweet (you were supposed to add 3 cups of sugar to 3 cups of pineapple juice!). However, it did make for a pretty picture with an improvised umbrella!

Here’s the best recipe I found, courtsey of Intercot:

2 cans (20 oz. each) DOLE Crushed Pineapple
2 tablespoons lemon juice
2 tablespoons lime juice
1/3 cup sugar
1-1/2 cups heavy whipping cream, whipped

Drain pineapple; reserve 2 tablespoons juice. Set aside. Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender or food processor container. Cover; blend until smooth.

Pour into two 1-quart freezer zipped bags. Store bags flat in freezer. Freeze 1-1/2 hours or until slushy.

Stir pineapple slush gently into whipped cream until slightly blended, in large bowl.

Return to freezer until completely frozen, about 1 hour and serve.

 

The freezer bag method is a pretty good innovation, but we just put all of the ingredients into our hand-crank ice cream maker and stirred until it was approximately the consistency of soft-serve ice cream. Either way works.
