A Vegetable Challenge

Children and vegetables. It seems that so often, those two ideas just can’t get together. Everywhere we look it seems there is another parent lamenting their child’s disinterest in vegetables. Yet expert after expert tells us there must be more vegetables. What is a desperate parent to do?
One of these parents has decided to take matters into her own hands and change her children’s attitude toward vegetables. Charlotte, a mother of two, lives in London and is challenging her children to The Great Big Vegetable Challenge. Charlotte’s inspiration for the challenge is the alphabet, and from A to Z her and her picky son will review at least three recipes per vegetable. That’s a lot of veggie eating going on! Currently they are exploring chard, with a whole lot more veggies to come.
This coming summer, I will be taking my children on their own vegetable journey. While a tad smaller than The Great Big Vegetable Challenge, our inspiration is coming from the popular children’s book by Lois Ehlert, Eating The Alphabet: Fruits and Vegetables from A to Z. Book in hand, we will be exploring different produce all the way through the alphabet. With any luck, a few opinions can be swayed and some new favorite foods discovered. I’ll be sharing some of our findings here, as our goal is to discover new vegetables to enjoy, and our favorite way to prepare them. While this is a summer project for us, we are going to tackle a spring vegetable right away, as asparagus is making its way into the markets around us. Will my children eat asparagus? And will we find the best way to prepare it? Stay tuned. Next week asparagus will be put to the test.
