Pizza Screens

Posted by Todd M Johns on The Cook’s Kitchen.

About a month ago, I started going to Index Restaurant Supply in the River Market area of Kansas City. It’s a block West of Planters and a block North of the Farmer’s Market, for those familiar with downtown Kansas City.  Cool place and they have everything you’d find in a restaurant. Open to the public, and you’ll be tempted with unique stuff for the home kitchen.  It is restaurant quality equipment, which doesn’t equate to high end, but often means specialty equipment you’d only find in a restaurant kitchen.
Pizza Screens.
My recent find was a set of pizza screens for when I make pizza on my gas grill or oven. I like to use a pizza stone, but the stone is really meant to stay in the oven and is preheated prior to placing the pizza on the stone.  With the screens, I can leave the pizza stone on the grill and put the pizza on the screen. Getting the uncooked pizza onto the stone was a hassle. Not anymore.  I also grabbed a deep dish pizza pan.

I use my pizza screen to cook small items on my bbq grill (have a dedicated screen or be prepared to really scrub afterwards)

Works great and easy to store!

That’s funny, I just read an article last week about pizza screens for the grill. I can’t wait to get one. ‘Course I have to get a grill first. Thanks for the information.

they’re also known as “skeets,” at least they were when I worked in a pizza place near philly
